Butternut Squash Chips –Squash into 1/8 inch thin pieces. Pre-heat the oven to 375 degrees. Drop the slices into boiling water for 2 minutes (this helps them crisp up when baked). Pat them dry. Cover baking sheets with parchment paper, and place pieces onto the baking sheets. Brush slices with olive oil, and sprinkle with sea salt or any other seasoning you may want on your chips. Bake for 15-20 minutes or until slightly browned.
Baked Zucchini Chips – Slice zucchini into 1/8 inch thin slices. Pat dry. Pre-heat oven to 225 degrees. Cover baking sheets with parchment paper, and place slices on baking sheets. Lightly brush with olive oil and sprinkle sea salt or seasoning of your choice. Bake for 45 minutes. Rotating your baking sheets and bake for an additional 30 minutes or until they look browned and crisp.
Banana Chocolate Nut Butter Bites – Three large bananas, 1/3 cup nut butter of your choice, and ½ cup of melted chocolate of your choice. Slice bananas into ¼-1/2-inch-thick slices. Spread 1 teaspoon of nut butter onto a slice and sandwich with another slice. Place on a baking sheet that has been covered with wax paper and freeze for a minimum 1-2 hours. Melt chocolate, then remove frozen banana bites from freezer, and dip each banana bite half way in the chocolate and place back on wax paper. Freeze for another hour.
Granola Nut Butter Apple Sandwiches – Core a two apples and slice them into rounds. Mix ¼ cup of rolled oats and a ¼ cup of raisins into a ½ cup of nut butter of your choice, spread the mixture on half the slices and top the with another slice. Refrigerate.
Spicy Sriracha Popcorn – Make air pop popcorn, stir the amount of Sriracha you desire into a 1/8 of a cup of olive oil and drizzle over popcorn.
Avocado Toast with a Sunny-Side up Egg – Toast a piece of sprouted grain bread, spread a ¼ of an avocado on the toast, and place a sunny side egg on top of the toast.
Avocados and Hard-Boiled Eggs – Simply chop up an avocado and a couple of hard-boiled egg.
Yogurt-Covered Berries Bites – Cover your favorite berries with Greek Yogurts, place on a flat plate or baking sheet that you can fit into your freezer. Freeze for 1-2 hours.
Cauliflower Crust Mini Pizzas – The ingredient list is a bit longer on this one, but it is a snack is worth it. 1 large head cauliflower (about 4 cups shredded), 2 large eggs, 1 teaspoon dried oregano, 1 teaspoon dried basil, 2 teaspoons garlic powder, 1 cup organic pizza sauce, 12 fresh basil leaves, 1 tomato sliced into 12 rounds, 3 ¼ cup finely shredded Parmesan cheese. Shred cauliflower into crumbles. Cook cauliflower in microwave in a large microwave-safe bowl for 8 minutes. Allow to cool 10 minutes and pat dry. Beat eggs and mix with two cups shredded parmesan cheese, oregano, basil and garlic powder until combined. Stir in cauliflower. Preheat oven to 450°F. Lightly grease 2 baking sheets (or pizza pans) divide mixture into 12 balls. Place balls on sheets and pat each into a thin round about 4 inches wide. Bake for 15 minutes until golden brown (the edges might be charred; this is OK). Remove sheets from oven and heat broiler. Top each mini crust with pizza sauce, basil leaves, remaining Parmesan cheeses and tomato slices. Broil pizzas until cheese is melted and tomatoes are slightly roasted, about 5 minutes. Remove from oven and let cool 5 minutes before serving.
